Jinotega Finca Las Camelias
This coffee is sourced from Finca Las Camelias , a family-owned coffee farm located in the highlands of Jinotega, Nicaragua . In this lush mountainous region, small-scale farmers cultivate their coffee under partial shade, alongside native trees and biodiversity-friendly plantings, creating a balanced ecosystem that supports soil health and sustainable organic production. The farm’s soils are clay-mineral rich volcanic soils , providing essential nutrients and excellent drainage for Arabica coffee, and the high-altitude terrain (1,000–1,100 meters) with cool nights and abundant rainfall allows cherries to ripen slowly, developing complex flavors.
Coffee at Finca Las Camelias is carefully hand-harvested during peak season. The ripe cherries are processed on-site using a combination of machine and sun-drying methods , ensuring that the unique terroir of Jinotega is reflected in every cup. The beans are then sorted and milled to meet export standards, maintaining consistency, quality, and traceability. This lot represents the dedication, craftsmanship, and ecological stewardship of the farm, offering an organic coffee that highlights the bright citrus, dark chocolate, and hazelnut notes characteristic of this highland Nicaraguan region.

Asociación Regional la Cascada de Bordones
This coffee comes to us from Asociación Regional la Cascada de Bordones (The Regional Association La Cascada de Bordones). A fully washed lot, this coffee is grown in the department of Huila at an altitude ranging from 1700-1850masl and is patio dried. Asociación Regional la Cascada de Bordones was founded on March 16, 2003, through the initiative of a group of coffee farmers. They sought opportunities to improve the quality of life for both farmers and their families. The association’s name was inspired by the Bordones waterfall in Huila, which is the second largest waterfall in Colombia with one of the most beautiful landscapes. The word “Huila” comes from the Páez indigenous language and translates to “luminous mountain,” likely due to the topographical variety of the region. Huila’s climate is influenced by several snow-capped volcanoes in the Andes mountains that provide rich minerals to the soil. Asociación Barillense de Agricultores (ASOBAGRI)
Founded in 1989, ASOBAGRI (Asociación Barillense de Agricultores) is one of Guatemala’s most respected and progressive coffee cooperatives. Based in the remote town of Santa Cruz Barillas in the highlands of Huehuetenango , this cooperative represents over 1,200 smallholder producers , the majority of whom are indigenous Q’anjob’al Maya . These families have been cultivating coffee for generations using traditional and organic methods that are deeply rooted in cultural heritage and environmental stewardship.
ASOBAGRI was established to empower local farmers by providing fair market access, technical support, and community development. It is committed to organic and Fair Trade practices, promoting sustainable farming and improving the livelihood of its members. The coop emphasizes gender equity and supports a special women’s program called Café de Mujeres , which focuses on coffee produced exclusively by women members to enhance economic independence and recognition within the coffee value chain.
ASOBAGRI operates its own wet and dry mills, quality control lab, and export logistics — ensuring full traceability and consistency from farm to final cup.
