VARIETAL – RED AND YELLOW CATUAI, MUNDO NOVO

Lot 1273 features two complementary varieties — Red and Yellow Catuai and Mundo Novo — both deeply rooted in Brazilian coffee culture and exceptionally well-adapted to the high-altitude conditions of Matas de Minas. Catuai brings brightness and structural clarity, while Mundo Novo contributes body, depth, and a rich, lasting finish. Together, they form a cup that is both expressive and balanced — a hallmark of thoughtful varietal selection.

The result is a coffee with gentle acidity, medium body, and layered sweetness, with notes of chocolate, roasted nuts, caramel, and dried fruit.

Catuai (Red & Yellow)
ORIGIN

A Mundo Novo × Caturra hybrid developed by the Instituto Agronômico de Campinas (IAC) in Brazil. Available in red and yellow cherry variants.

CHARACTERISTICS

Compact dwarf plant, high yield, wind and rain resistant. Red variant has slightly more defined fruit character; yellow variant ripens slightly earlier with a softer sweetness.

Clean, sweet, and balanced with brown sugar, caramel, and mild citrus. Yellow tends softer and honey-like; red shows subtle red fruit notes.

ORIGIN

A natural Bourbon × Typica hybrid discovered in São Paulo, Brazil in the 1940s.

SUN DRYING

After harvesting and sorting, the cherries are spread in thin layers on raised beds. They are naturally dried under the sun for 2–3 weeks, depending on the weather conditions.

EVEN DRYING

The cherries are regularly turned throughout the day to ensure even drying and to prevent fermentation. This slow drying process helps develop sweetness and clarity in the cup.

OPTIMAL MOISTURE

Drying continues until the cherries reach the ideal moisture content for hulling. This careful control preserves the integrity of the beans and enhances the rich flavor profile.
