Organic Mexico HG Chiapas

New Arrival from Mexico

April 2, 2026

This organic coffee is sourced from smallholder farms in the Chiapas highlands of southern Mexico, where rich volcanic soils, high elevations, and a humid cloud forest climate create ideal conditions for growing high-quality Arabica coffee. Grown at elevations between 1,200–1,800 MASL, the coffee develops a smooth and balanced profile with natural sweetness and gentle acidity.

The coffee is cultivated by indigenous and rural farming communities working through cooperatives that support organic certification and sustainable agricultural practices. Coffee is grown under dense shade canopy systems that protect biodiversity and maintain healthy soil ecosystems. After selective hand-harvesting of fully ripe cherries, the coffee is fully washed, then carefully fermented, cleaned, and sun-dried on patios or raised beds to preserve clarity and consistency.Coffee farmer picking cherries and beans drying in the sun

The resulting cup is smooth and approachable, with tasting notes commonly including milk chocolate, caramel, toasted nuts, and mild citrus. It features a medium body, balanced acidity, and a clean, sweet finish that reflects both its highland origin and careful washed processing.
