This coffee is sourced from a network of smallholder farmers in the highlands of Chiapas, Mexico , where generations of coffee growers cultivate their crops under shade canopies in rich, volcanic soils. These farmers typically manage small plots of land and use traditional practices, prioritizing sustainable agriculture and organic production methods.

After harvest, the coffee is fully washed and sun-dried , ensuring clarity and balance in the cup. It is then decaffeinated using the Mountain Water Process (MWP) in a certified facility in Mexico—an all-natural, chemical-free method that preserves the coffee’s complex flavors while removing 99.9% of the caffeine.
