This decaffeinated lot is sourced from smallholder farms in the Cajamarca region of northern Peru, where the high-altitude terrain with fertile volcanic soil and abundant rainfall provides ideal growing conditions for Arabica. The coffee is grown under organic practices by cooperatives or producer associations engaged in fair-trade and sustainable farming, ensuring environmental care and community support. After harvesting ripe cherries, the coffee is washed to clean off the fruit pulp, then carefully dried (often on patios or raised beds) to preserve clarity of flavor. The caffeine is removed using the Swiss Water Process, a chemical-free, water-based method that retains much of the coffee's original flavor profile. The resulting cup is known for smoothness and richness, with flavor notes often including dark chocolate, nutty overtones like hazelnut, and hints of caramel, striking a balance between body, mild acidity, and clean finish.
