Notes of Baker Chocolate, Cedar and Creame
Cooperativa Café Timor (CCT) is Timor Leste’s largest agriculture cooperative with 28,000 members. It produces high-grade coffee, spices, and cassava flour for domestic and export sales. CCT is owned, managed, and staffed by East Timorese, operating in 11 of 13 Municipalities of the country.
CCT works with very small farms in East Timor; most landowners own less than a hectare of land. The CCT was established in 1994 with the help of the USDA and NCBA. and in 2001, the cooperative obtained Fair Trade certification. The farms are located in Maubesse, an area of high altitude and a sub-district in the Ainaro district; Atsabe, in the Ermera district; the Lequisa district; and the Aifu region. The coffee from East Timor was originally planted over 400 years ago by Portuguese colonists. However, after an epidemic of coffee leaf rust, the replanting of plants occurred and led to the creation of a new coffee varietal of Hibrido de Timor.
For the last 17 years, CCT has operated “free of charge” primary health care services for the benefit of rural communities in the coffee-growing regions of Ermera, Ainaro, Aileu, Liquica, and Manufhai Municipalities. Health services include general medical, dental and maternal and child health services. CCT utilizes diverse but integrated models of service delivery tailored to meet the unique health and social development needs of rural/ remote Timorese families. CCT has fixed and mobile clinical services enhanced with outreach village-based services. CCT’s Men’s Health Program is a unique community-based volunteer program addressing issues of men in health; nutrition; gender issues; social inclusion and income management.
CCT’s health activities are sustained by the sale of the cooperative’s agricultural produce and work closely with the Timor Leste Ministry of Health to improve the health status of rural Timorese
ROASTING
Artizan Coffee uses a complex, time-consuming and skilled process known as “split-roasting” technique for this estate coffee. One part the beans are roasted for a shorter time and a lighter color in order to highlight the delicate flavors and aromas of the coffee. The other part is slow-roasted for a longer time and darker color to add body and intensity.
