Established in 1999, the Oromia Coffee Farmers’ Cooperative Union has quickly become the largest Fair Trade coffee producer in Ethiopia. The OCFCU was formed when 23,691 members of 35 small cooperatives came together with the goal of exporting their coffee directly to the specialty market. All six of their Oromia Highland Coffee varieties (Yirgacheffe, Sidamo, Limu, Lekemptl, Jima, & Harrar) are grown by indigenous farmers in the southwestern rainforests of Ethiopia. Oromia’s coffee is heirloom, forest-grown, and organic. In 2005, the cooperative was awarded first place for their unwashed coffee in the East African Fine Coffee Association cupping competition. Of the top ten qualifiers in the competition, three were Oromia members. Focusing on 100% organic production, Oromia produces approximately 70 containers annually and has over 7,000 members who are Fair Trade certified. Given the proud history of Ethiopian coffee, and the unique flavors and aromas of this cup, this Organic Ethiopian is sure to please even the most critical palate.

Small coffee producers pick and process their coffee at their own micro-wet mills and then dry their own coffee, typically on elevated tables inside solar dryers that provide protection from the rain.

Chajulense has nearly 1300 members and more than 30 years of experience cultivating organic coffee from the communities of Chajul, Nebaj y Cotzal, located in the department of El Quiché, Guatemala. This region, called the Ixil, is known for its rugged terrain and preservation of the indigenous heritage, distinct clothing, and dialects. Chajulense focuses on supporting indigenous communities recovering from the devastation caused by civil war by empowering economic development through coffee cultivation. Chajulense Members cultivate, harvest and process coffee with micro-mills on farms that average 1 acre in size. Chajulense also employees nearly 500 women by remaining committed to the tradition of hand sorting coffee as part of the export preparation.

Matas de Minas Klem Organic Coffee Fair Trade

The Klem family estate, located in the Matas de Minas growing region near the city of Luisburgo, has a reputation for producing quality coffee recognized in several cupping competitions including a third-place finish in Brazil’s 2017 Cup of Excellence. But the Klem family is driven beyond quality. They have spent more than 50 years producing organic coffee on 430 acres. And by no means alone. The Klem family has a partnership with 50 families who work on the estates and share in the profits. This co-ownership has created an incredibly dynamic and efficient estate where bananas, avocados, vegetables, eggs, and honey are also organically produced. At the same time more than 5000 native trees are planted each year in the constantly expanding forest preserve. During the harvest coffee cherries are floated to remove less dense and damaged coffee, and then placed on patios to pre-dry before being moved to mechanical driers to precisely finish the drying to 11.5 percent moisture. After drying, the coffee is carefully stored until it is time for milling and export, which is also done at the Klem estate where they have their own cupping lab to ensure the quality of exported coffee.

Fazenda Nossa Senhora de Fatima is situated within the Triangulo Mineiro, in the famed Cerrado region. Coffees from this area are often touted as some of the best that Brazil has to offer. The dark red soil typical of the area produces an excellent cup.

This farm produces only 100% organic coffee. Its 895,000 coffee trees are closely monitored by a full-time agricultural engineer to ensure consistency and quality. Ricardo Aguiar Resende, a third-generation coffee farmer, directs the farm’s production, commercialization and social projects along with his wife, Gisele.

Fazenda Nossa Senhora de Fatima (FNSF) has gone above and beyond in its commitment to social and environmental equity. The 75-110 workers at this farm travel every day from three towns: Perdizes, Patrocinio and Igrejinha da Macega. Ricardo arranges the transportation for the workers every day, though some actually live on the property. The production of natural fertilizer from livestock and a new biodigestor combine to produce all the energy needed for the farm. FNSF strives to produce all of the energy and most of the inputs needed for coffee production. The reforestation of native trees is underway, adding to the farm’s portion of shade-grown coffee, which is not commonly found in Brazil.

In January of 2012, the farm became the world’s first Fair Trade Certified™ coffee estate. Within 3 months of certification, the farm’s 110 workers (40% of whom are women) earned $7,250 in community development premiums, which they elected to invest in critical healthcare programs. Through FNSF’s participation in Fair Trade USA’s Fair Trade for All initiative, 30 workers have already received eye exams, 27 received glasses, and 11 received dental care.

TIMOR FTO ROYAL SELECT SWISS WATER PROCESS DECAF coffee is curated from lots that the Royal team has selected based on cup profile, physical preparation, and potential to express excellently once decaffeinated. During the Swiss Water process, the green coffee is hydrated to expand the beans for caffeine extraction. The hydrated green coffee is then introduced to Green Coffee Extract (GCE), a unique solution of concentrated coffee soluble that allows the caffeine to leave the green coffee via osmosis while minimizing the loss of desired flavor compounds. Once the caffeine has been removed the green coffee is re-dried and re-bagged for transport, and the GCE is filtered of its caffeine through proprietary carbon filters and recycled to be used again.
