Cherry Robusta coffee from India is one of the world’s great Robustas. Most countries consider Robusta as the poor relation of the coffee family. However in India they apply the same care to the cultivation, harvest and processing of Robusta coffee as they do to Arabica. In fact, Robusta production in India is almost double that of Arabica. All high-quality, natural or dry-processed Robusta and Arabica coffees in India are known as Cherry. This is not to be confused with the cherry fruit on the coffee tree! Cherry A indicates it is one of the highest grades of Indian coffee.

Generally roasted robusta beans produce a strong, full-bodied coffee with a distinctive earthy flavour. There may be more bitterness than Arabica. However, some coffee drinkers love the powerful flavour for its strength and finish. Moreover, Cherry Robusta is important in traditional Italian coffee culture, especially for espresso blends. Some baristas also claim that Cherry Robusta gives a better foam or crema on the coffee.

Klem Natural Red Catuai Organic Fair Trade

The Klem family estate, located in the Matas de Minas growing region near the city of Luisburgo, has a reputation for producing quality coffee recognized in several cupping competitions including a third-place finish in Brazil’s 2017 Cup of Excellence. But the Klem family is driven beyond quality. They have spent more than 50 years producing organic coffee on 430 acres. And by no means alone. The Klem family has a partnership with 50 families who work on the estates and share in the profits. This co-ownership has created an incredibly dynamic and efficient estate where bananas, avocados, vegetables, eggs, and honey are also organically produced. At the same time more than 5000 native trees are planted each year in the constantly expanding forest preserve. During the harvest coffee cherries are floated to remove less dense and damaged coffee, and then placed on patios to pre-dry before being moved to mechanical driers to precisely finish the drying to 11.5 percent moisture. After drying, the coffee is carefully stored until it is time for milling and export, which is also done at the Klem estate where they have their own cupping lab to ensure the quality of exported coffee.

The Sumatra FTO Takengon KKGO coffee is produced on family-owned farms organized around the Koperasi Kopi Gayo Organic cooperative (KKGO), located in the Takengon highlands of the Aceh province on the island of Sumatra, Indonesia. This region of Indonesia is also referred to as the Gayo land because the coffee farmers are from the Gayonese ethnic group. A high percentage of farmers, typically from the most remote villages of the Takengon highlands, are widows who lost their husbands during periods of conflict in Aceh. These families are also in the process of rebuilding after an earthquake in 2013.

Farmers in Peru usually process their coffee on their own farms using the Fully washed method. Cherry is usually pulped, fermented and dried in the sun. Traditionally, smaller farmers would use tarps laid on the ground or under the roof of their homes. Increasingly, cooperatives are establishing centralized drying facilities – usually raised beds or drying sheds where members are encouraged to dry their parchment. Some farmers are beginning to adopt these practices on their own farms, and drying greenhouses and parabolic beds are becoming more common as farmers pivot towards specialty markets.

After drying, coffee will then be sold in parchment to the cooperative. Producers who are not members of a cooperative often have the opportunity to sell on to cooperatives, as well.

Mandheling Sumatra Indonesia Coffee Organic Fair Trade

This coffee comes from the Takengon region. While it is wet-hulled in the usual Sumatra style, the hulling is not done until the coffee reaches 30% moisture content generally in this region, where as most Sumatra is hulled at 45-50%. This gives it a cleaner cup and accentuates the spicy, bright notes while downplaying the earthiness typical to Mandheling coffees. It is processed at the Swiss Water decaf plant in Vancouver.

Coffee first made its way to Peru around the 1700s, and the region became one of the first in South America to grow the beans. In fact, to this day, no one knows why or how coffee made its way to Peru before the rest of Central and South America. But throughout the next couple of centuries, coffee production grew and flourished.

In the late 1800s, a fateful disease changed the course of history for the Peruvian coffee industry. Up to that point, the world had relied on Indonesia and the surrounding countries for their coffee. But when a disease decimated Asia’s coffee crop, the rest of the world started looking at other countries for their coffee, and all eyes turned quickly to Peru.
